Simple dinner of three bean tacos made of diced red onion, kidney beans, cannellini beans, chickpeas, tvp (textured vegetable protein, aka soya mince), and organic crushed tomatoes, all slightly smashed with a potato masher then put onto taco trays (easier to stuff and eat than traditional taco shells!), sprinkled with cheese and baked for 10 minutes. Served with blanched green beans, pomodorino tomatoes and corn, drizzled with balsamic.
