This is a thick, hearty, wintery soup. It’s more of a stew, really, as the bulgur soaks up the majority of the liquid. It’s easy to thin by adding more broth or boiling water, but I like the thickness of it, especially when it’s all I’m having (with bread) for the meal. It’s very filling. I doubled the recipe so that I’d have enough for lunch tomorrow, but I have enough for about 5 lunches, so that was probably unnecessary!
