Breaded Baked Cod, Steamed Green Beans, Corn on the Cob, Red and White Quinoa with Bulgur Wheat

Sometimes entire meals are designed around a condiment I have a craving for – most often ketchup or my guilty pleasure, Bisto gravy. Tonight was one such night, and thankfully I had all the ingredients I needed in the kitchen to make it. I used breaded baked cod, steamed green beans, corn on the cob (I know, I know – food miles/off season…), and mixed grains made up of red and white quinoa and bulgur wheat. I tossed a few toasted pine nuts in with the grains, and made an extra large batch as I like to add it cold to salads throughout the week. And of course, an extra large jug of Bisto to drown it all in. Hearty comfort food.
