Salmon and Rice with Teriyaki Vegetables

I worked late one night this week and didn’t have much time to make dinner. I also had a lot of vegetables in the fridge which needed using up. I cut up bok choy, asparagus, and aubergine into bite sized pieces and mixed them with a large bag of kale, then sauteed them in a large pan for a few minutes in a bit of olive oil and garlic. I then placed the lid on the pan and let them steam for another minute or two. I poured one bag of Blue Dragon Teriyaki Stir Fry Sauce on the vegetables and stirred until the veg was nicely coated in the sauce. Meanwhile, I cooked the salmon very simply in a hot pan with garlic and lime juice with a touch of salt. Finally, I microwaved a bag of Uncle Ben’s Basmati Rice (2 minutes to cook!). Dinner was served in 15 minutes! And was delicious.
