Salmon Stir Fry

Oh how I love a good stir fry! The combinations of things you can add to it are endless. It’s easy, quick, healthy, and so delicious. Last night’s stir fry:

Bok Choy
Red Peppers
Yellow Peppers
Pad Thai Noodles

I cooked all of the veg in a large skillet with a little olive oil and salt. When cooked but still crisp, I added the noodles and some bottled hoisin sauce and stirred until everything was coated in sauce and hot. In another pan I cooked the salmon in lime juice. Just when it was finished, I tossed in some sliced spring onions.

Serve the salmon on top of the noodles/veg with a sprinkle of seeds and a half a lime.

Total cooking and prep time: 20 minutes.
