Last night’s dinner was a lovely variety of healthy and yummy foods. I started by making the quinoa. I washed the grain then added it to a small, dry pot on medium heat. I stirred the quinoa around, getting it nice and hot. Then I added some pine nuts, and let them get all toasty. Then I added the boiling water and let it simmer until the grains started to open. I added about 100g of washed baby spinach leaves, put the lid on the pot and turned off the heat, letting the grain soak up the water.
In a large skilled I cooked up some sliced mini portabello mushrooms, then set them aside. In the same pan I heated olive oil and garlic, then cooked some sliced broccolini. I set that aside when done and cooked the salmon in the same pan with a little more olive oil and garlic. I used the juice of 1/2 a lime on the salmon and sprinkled with salt.
While the salmon was cooking, I steamed the corn in a bamboo steamer.
Just before serving, I seasoned the quinoa with salt and lime juice.Pin It
