Tuna with Mashed Cauliflower and Greens

I had lots of veg in the fridge I wanted to use up before it went bad, and also some nice tuna steaks, so I made a very veggie-tuna dinner on Saturday night. Instead of a starch, I steamed two heads of cauliflower, then mashed it up using an immersion blender. I added a knob of olive oil spread and some salt and stirred it all together, like mashed potatoes, only less carbolicious! Before serving I added just a small sprinkle of freshly grated cheddar cheese. I also sauteed a bunch of greens together: kale, asparagus, and green beans. To finish, I sauteed the tuna until just cooked with a bit of garlic and olive oil. Delicious and healthy. I was fine without a starch in the meal, but hubs ended up getting hungry again just before bedtime.
