Last night’s dinner was so good that I can’t wait for lunch today so that I can hoover up all of the leftovers! It was an easy dinner to make, with few ingredients, but it does take a lot of attention. The giant couscous (also known as Israeli Couscous) is prepared like risotto, so it needs 20 or so minutes of direct attention and stirring. You can cook it like rice, but it doesn’t come out nearly as good, in my opinion.
