Prawn and Pea Quesadillas

For a quick and easy and delicious meal, this ranks pretty highly. Simply defrost a package of pre-cooked frozen king prawns and cut them into 2 to 3 pieces each. Soak a cup of peas in boiling water for a few minutes. Mix the two together with a handful of low-fat shredded cheese, and divide them amongst 4 flour tortillas. Fold the tortillas in half and bake in a hot oven for 5-10 minutes until the tortillas start to crisp and the cheese melts. Keep an eye on the tortillas so that they don’t burn. Serve this with salsa, guacamole and sour cream. Enjoy!
