Vegetarian Burritos


This week I made vegetarian burritos using the Old El Paso Burrito Dinner Kit. The kit comes with 8 flour tortillas, a stir-in sauce, and salsa. I got it for the stir-in sauce, as I really like the flavour of it. I make burritos fairly often, but this sauce really elevates them to a different level. The sauce, which is really more like a paste, adds a depth of flavour and spice I haven’t been able to achieve on my own. These burritos were especially yummy.

Ingredients:
One Old El Paso Burrito Dinner Kit
About 250g frozen vegetarian meatfree mince (I used Sainsburys brand)
1 tin black beans, rinsed
1 carton chopped tomatoes
1 small onion
1 small carrot, finely chopped
3 tablespoons shredded sharp cheddar cheese

Method:
In a large skillet, heat a little oil and fry the onion and carrot until soft, around 4 minutes. Add the mince, chopped tomatoes in the juice, and the contents of the Old El Paso stir-in sauce. Stir to combine and cook over a medium heat until the mince is hot. Add the black beans and combine.

Heat the tortillas according to directions (they are easier to roll if they are warm). Put a small mound of the ‘meat’ in the centre of the tortilla. Top with a sprinkle of the shredded cheese. Roll up and place seam-down on a baking sheet. Repeat until all of the tortillas and filling are gone. Bake in a hot oven for around 10 minutes, until tortillas are toasted and crispy, but not burnt.

Serve with the salsa on the side.
