The first time I made the Broccoli Cheddar Rice Cups, I fell deeply in love with them. They are really tasty, and if you don’t overdo the cheese and use brown rice, they are very healthy! I hadn’t made them in a while, so I pulled out the old recipe. I needed to use up a package of pre-sliced mushrooms, so I sauteed the mushrooms until they were completely dry and added them to the mix. It made the recipe even better! I will try to remember to add mushrooms from now on.
