This salad is one of those ‘kitchen sink’ salads – you put in whatever you have in the fridge bc you really can’t go wrong!
I started with Waitrose’s Mixed Quinoa with Bulgar Wheat (Red & white quinoa with bulgar wheat) cooked in vegetable broth. When it was done, I drained it and put it in a large bowl. I added a carton of rinsed and drained black beans, a can of sweet corn, some blanched broccoli and asparagus, a handful of toasted pine nuts, and some crumbled feta cheese. I served this with some simple pan fried cod cooked in a pan with some minced garlic, salt and fresh lemon juice. It was a delicious and very healthy dinner!
I made the whole 500g bag of Mixed Quinoa so that i’d have plenty leftover for lunches this week (I toss in some salad leaves, diced tomato, celery, and drizzle with some balsamic dressing).Pin It
