Tilapia is a fish that is not often found in grocery stores the UK. I was getting bored of having the same salmon, cod, tuna and haddock and was looking for something different. That’s when I saw that Sainsbury’s online (where I’ve been ordering my groceries weekly for around 7 years) had tilapia! It’s from the Saucy Fish Co, which is a brand I like (see my review of The Saucy Fish Co. Salmon Fillets With Chilli Lime & Ginger Dressing).
Originally I thought I’d make my own sauce for the fish, but then I decided at the last minute not to. It was a lovely summer night, and I had a mango in the fridge. I baked the tilapia, and served it with a simple room temperature ‘salad’ of orzo, chopped mango and asparagus. I seasoned the ‘salad’ with only a lime juice as I figured the sauce for the fish and the extra mango would add flavour to the rest of the dish. Unfortunately, the mango I had wasn’t as juicy and ripe as it should have been. I also should have grilled or roasted the asparagus rather than toss it into the water with the orzo, as that would have also enhanced the flavour. This dish has a lot of potential, and I’ll definitely try it again before the end of the summer. If you have any suggestions on how to add more flavour to the orzo salad, i’d be happy to hear them!
