A friend was visiting for lunch today, and I didn’t want to spend the whole time she was here cooking. I can multitask with pots and pans just fine, as long as I don’t have to talk while doing it, as I find it difficult to pay proper attention to both the food and the company. I’m not really one of those people who enjoys having people in the kitchen while I’m cooking. I love to find recipes where I can do most or all of the prep in advance, and then spend the time with company. This dish is the perfect dish for many occasions – for lunch, brunch, dinner, company, family… whatever. It was so easy to make, and very delicious. I’m sure this is a recipe which will get tons of use.

As I didn’t have time to research a comparable cheese, I went with 2 cups shredded medium English cheddar and about 1/2 cup of shredded Emmental. I think the cheese possibilities are pretty endless, and you can choose whatever kind you like. 2.5 cups was plenty of cheese in my opinion, even though the recipe calls for 3.
