It’s an ideal dish to make for guests as you can prepare in advance and bake once they arrive, leaving you free to chat instead of being stuck in the kitchen.

Crustless Spinach Quiche with Vegetarian Chorizo

Ingredients
  1. 1 small red onion, diced
  2. 200g baby spinach leaves, washed and squeezed dry
  3. 6 eggs
  4. 50g Quorn Chorizo-style slices, diced
  5. 2 cups shredded cheese of your choice
  6. salt and pepper
Instructions
  1. Preheat the oven to 350F/175C.
  2. Heat a small amount of oil (or cooking spray) in a skillet and cook the onion for 3 minutes, or until soft and starting to brown.
  3. Add the spinach and cook, pressing down with a spatula occasionally, until all of the liquid is cooked off.
  4. In a bowl, crack 3 whole eggs, and 3 egg whites, discarding the yolks. Whisk briefly, until combined.
  5. Add the cheese, chorizo, and the onion/spinach mixture to the eggs, stirring to combine.
  6. Season with salt and pepper.
  7. Coat a quiche pan with cooking spray and pour the egg mixture into it.
  8. Bake in the oven for 30 minutes. Let rest for 10 minutes.
  9. Serve with side salad and crusty bread.
