Finding snacks which are nut-free, healthy, and provide a good amount of energy can be challenging. I like to avoid ingesting empty calories or unhealthy ingredients as often as possible. These home-made bars are incredibly easy to make and are delicious! The raisins and the honey give it enough sweetness, and the oats and seeds keep you from getting hungry again too soon. I was really pleased with how these turned out.

Healthy Oatmeal Raisin Seed Bars

Ingredients
  1. 1 1/4 cups milk
  2. 1 large egg
  3. 2 tablespoons honey or Agave Syrup
  4. 1 teaspoon vanilla extract
  5. 1 teaspoon cinnamon
  6. 1 3/4 cups old-fashioned rolled oats
  7. 1/2 cup mixed seeds (sunflower, pumpkin, sesame, etc)
  8. 1 cup raisins
Instructions
  1. Preheat oven to 350°F / 175°C; line an 8-inch square baking pan with parchment.
  2. In a large bowl, whisk milk, egg, honey, vanilla and cinnamon. Stir in oats, seeds and raisins. Pour batter into pan and spread evenly. Pat down the mixture, making sure it's firm and level.
  3. Bake until golden around edges and set in middle, 30 to 35 minutes. Allow to cool completely on a wire rack before slicing.
  4. Store in the refrigerator.
