This is a fantastic spice mix to keep in the pantry to use on fish, chickpeas, lentil soup, or even lamb if you’re so inclined. It will keep for about 12 months if kept in an airtight container in your cupboard.

Sub-ah b’har Middle Eastern Seven-spice Mix

  1. 2 tbsp whole cumin seeds
  2. 1 tbsp whole coriander seeds
  3. 2 tbsp freshly ground black pepper
  4. 1 tbsp smoked mild paprika
  5. 1 tbsp whole cloves
  6. 1 tsp freshly grated nutmeg
  7. 1 tsp ground cinnamon
  8. 1 tbsp whole allspice berries
  1. Place the cumin and coriander seeds in a small, dry pan over a medium heat and toast until the cumin seeds start popping.
  2. Transfer the toasted seeds to a large mortar and pestle along with the remaining ingredients and grind to a find powder.
  3. Transfer to an air tight container and store in a dark cupboard for up to 12 months.
