I came across this recipe on Healthy Aperture when I was looking for a quick and easy vegan or vegetarian recipe the night before my groceries were due for delivery, which meant the cupboards were fairly empty. I usually don’t run out of avocados, since I’m fairly obsessed with them (whether or not they are ripe and ready is a different story!), and I always have a good supply of beans in the house. I was pleasantly surprised with the way these turned out. The burgers have a great consistency and flavour, and they were simple to make. I look forward to making and eating these again!


- 1 medium avocado
- 3 TBSP lime juice (from about 1-2 limes)
- 1 (15 ounce) can/carton no salt added black beans, rinsed & drained
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1 TBSP chia seeds
- 1/4 cup old fashioned or quick oats (not instant) (gluten free)
- 1 TBSP olive, coconut or avocado oil
- In a medium bowl, mash the avocado and lime juice. Add half of the beans, garlic powder, and salt. Mash together.
- Add the chia seeds, oats, and remaining beans. Stir well to combine completely (do not mash this time - the whole beans give the burgers a good texture).
- Shape into 4 patties, and refrigerate for at least 15 minutes or up to overnight (keep covered if storing for longer than 15 minutes).
- When ready to cook, heat oil in a large skillet over medium-high heat. Add in patties, making sure they don't touch. Cook for about 5-7 minutes per side, until crispy on the outside.
- Sprinkle with fresh chopped cilantro, if desired.
