These do take a bit of time to make, but they are worth it as they are healthy, tasty, and give good presentation! You can fill a pepper with almost any combination of things – tofu, vegetarian mince, rice and beans… I like to experiment with different fillings. These can easily be made vegan by omitting the cheese on top, but to me, the cheese is one of the highlights. But that’s because I love cheese! In this case I wanted the peppers (capsicum) to be high in protein, nutrition and taste, and low in fat. I topped up the protein factor by adding dried soya mince (aka textured vegetable protein, or tvp).
