This dish is very quick to prepare, especially if using pre-cooked prawns. It’s very flavourful between the smoked fish and the blue cheese, so don’t season with too much salt. It’s really delicious, and works either hot or cold, so is good for picnics and packed lunches as well as a hot dinner.
1 box merchant gourmet Orzo
1 small package of pre-cooked king prawns (no shells)
1 small package of hot smoked chunky smoked salmon
1 cup frozen peas (Green Giant)
1 egg, whisked with 1 tbsp water
blue cheese for serving
Boil the orzo for 5-6 minutes. With 2-3 minutes to go, add the frozen peas. When done, drain well. Return to the saucepan and stir rapidly while adding the egg. Continue serving until the egg is well distributed. (if you don’t stir continuously, the egg will set and you will have eggy bits throughout, which doesn’t look as nice). Add the prawns and stir well until they are hot. Break the salmon into large chunks and add to orzo. Mix gently so as to not break the salmon up too much. Serve on plates or in bowls and crumble blue cheese over the top.
