Salmon Teriyaki

This is an easy and quick way to make a teriyaki, but as I found out from making it a few times already, it gets longer the more the fish marinades. Be sure to double – or even triple – the sauce recipe so that you can pour it all over your vegetables and noodles.

3 TBS soy sauce
3 TBS mirin (Japanese sweet rice wine)
3 TBS sake
2 TBS honey
4 salmon fillets
Assorted vegetables of your choice
Noodles or Rice

Combine the soy sauce, mirin, sake and honey in a resealable bag. Add the salmon. Seal the bag and coat the fish with the sauce. Refrigerate for 1 hour, or up to 6.

Remove the salmon from the bag, reserving the marinade. Heat a skillet to medium-hot. Add a little oil and add the salmon, cooking about 2-3 minutes per side. Turn the heat to low and add the marinade. Cover the pan and cook for a further 3-4 minutes, until the salmon is cooked through.

Serve with sauteed vegetables and rice or noodles.
